Seems to be a problem with brew, so you might want to take it up with
them. Not much to go on from the log, but seems to be a problem with
/usr/local/etc: "/usr/local/etc is not writable." Does that path exist and
can you write to it? Again, it seems like a packaging problem (ie. brew),
so you should talk to the brew guys since they should know more.

Subject: [unixODBC-support] unixodbc won't link on OS X Yosemite
Sent by: unixodbc-support-bounces at mailman.unixodbc.org
I have tried every stack overflow site there is for solutions - I’m on OS
X Yosemite 10.10.2 and running python 2.7. Unixodbc simply refuses to get
linked and there are 0 submissions about how to do this successfully from
mac (other then brew install etc…. Which obv didn’t work)? Please help!
legal-mac01:site-packages atrombley$ brew install unixodbc --universal
==> Downloading http://www.unixodbc.org/unixODBC-2.3.2.tar.gz
Already downloaded: /Library/Caches/Homebrew/unixodbc-2.3.2.tar.gz
==> ./configure --prefix=/usr/local/Cellar/unixodbc/2.3.2_1
==> make install
Error: The `brew link` step did not complete successfully
The formula built, but is not symlinked into /usr/local
Could not symlink etc/odbc.ini
/usr/local/etc is not writable.
You can try again using:
brew link unixodbc
